The day after I’ve seen the coconut flour on the shelf of that shop, I couldn’t think of something else. I’ve already coveted expensive nice pair of shoes, bag, or garment; but food, not really. And especially not a flour. At least until that day. It’s the smell that stuck in my mind. So, I was just happy when I finally could smell it in my own cupboard.

Not long after, a series of baked goods using this flour followed, including those muffins

Because this cake is based and adapted from this clafoutis recipe, the texture is dense, rich and pudding-like.

With Spring now on, vivid rhubarb stalks grace every market stall. I have a soft spot for this vegetable. Usually I make a jar or two of compote. This time, I gently stewed it with palm sugar, bringing a tangy and colourful addition to the cake.

In my plate or outside, I just love Spring colours… So I’ll be back soon, with captures of the blooming time !

Coconut and Rhubarb Cake (makes 3 cakes of 12cm diameter or one of 24cm diameter) 80g coconut flour 250ml coconut cream 3 eggs 70g palm sugar (about one block) finely grated 1 pinch of salt

3-4 rhubarb stalks, cut in 1cm pieces 60g palm sugar

Preheat oven to 190°C. In a bowl, mix together coconut flour, grated palm sugar and salt. Add eggs, one by one, mixing after each addition. Pour in coconut cream and mix to have a smooth batter. Scoop equally the batter in tins (greased if necessary). Bake for about 30 minutes. Remove from the oven and wait 5 minutes before turning out of the tins and allow to cool upside down on a wire rack.

In large and shallow saucepan, over a low fire, cook lid on, rhubarb pieces and palm sugar for 15-20 mintutes or until just soft. Lay rhubarb pieces on top of each cake, drizzle with remaining syrup and serve.

Le jour après avoir vu cette farine de coco dans les rayons de ce magasin, je ne pouvais pas arrêter d’y penser. J’ai déjà convoité une onéreuse jolie paire de chaussures, un sac, ou un vêtement; mais un aliment, pas vraiment. Et surement pas une farine. Du moins pas jusqu’à ce jour. C’est son odeur qui m’est resté en tête. Donc, j’étais simplement contente lorsque j’ai finalement pu la sentir dans mon propre placard.

Sans attendre, une série de petites douceurs utilisant cette farine a suivi, dont ces muffins

Parce que ce gâteau est basé et adapté de cette recette de clafoutis , la texture est dense, riche, comme un pudding.

Le printemps est là à présent et les tiges roses de rhubarbe sont partout sur les étals au marché. J’ai un faible pour ce légume. Habituellement je fais un ou deux bocaux de compote. Cette fois, je l’ai fait mijoter doucement avec du sucre de palme pour apporter une touche colorée et acidulée au gâteau.

Que ce soit dans mon assiette ou à l’extérieur, j’aime les couleurs du printemps… Alors je reviens bientôt, avec quelques prises de vue du temps des fleurs !

Gâteau Rhubarbe Coco (pour 3 gâteaux de 12 cm de diamètre ou un de 24 cm diamètre) 80g farine de coco 250ml crème de coco 3 oeufs 70g sucre de palme (soit un bloc) finement râpé 1 pincée de sel

3-4 tiges de rhubarbe, coupées en morceaux d’1cm 60g sucre de palme.

Préchauffer le four à 190°C. Dans une jatte, mélanger la farine, le sucre et le sel. Ajouter les oeufs un par un, en mélangeant après chaque addition. Verser la crème de coco et mélanger pour obtenir une pâte homogène. Répartir la pâte dans les moules, graissés si nécessaire. Cuire pendant 30 minutes. Retirer du four et laisser reposer 5 minutes avant de démouler, puis laisser refroidir renversé sur une grille.

Dans une poêle à fond anti-adhésive, sur feu doux, à couvert, cuire la rhubarbe et le sucre de palme pendant 15-20 mintutes ou jusqu’à ce qu’elle soit juste tendre. Disposer les morceaux de rhubarbe sur le dessus de chaque gâteau, verser en filet le reste du sirop et servir.

I have never seen coconut flour, does it look like coconut shavings? I have to try this recipe, Rhubarb looks almost like small cut strawberries! I love the combination of coconut, and Rhubarb! Pam @ Kitchen Cookware set
