Peanut and Sesame Candy | At Down Under | Viviane Perenyi

The idea of making this treat came when I was browsing the aisles of an Asian store. The original candy was wholly made of sesame seeds and reminded me a similar confection from my childhood made of peanuts. Because my love of nuts is not a secret, my version combines both sesame seeds and roasted peanuts. Sticky, crunchy and totally sweet these little treats are perfect to get a sugar fix. Except the caramel that may be delicate and requires full attention, the candies are pretty simple to do. I will experiment around the idea with different nuts and a salted caramel version too. I think, they will make a good Christmas gift.

Peanut and Sesame Candy | At Down Under | Viviane Perenyi

Peanut and Sesame Candy (makes 15)

50g / 1/4 cup sesame seeds 50g / 1/4 cup black sesame seeds 200g / 1 1/3 cup raw peanut 290g / 1 1/2 cup sugar

On a tray lined with baking paper spread peanuts and bake in the oven at 175°C/350°F for 10-15 minutes. Remove the peanut from oven and let them cool. Chop the peanuts roughly and add them to the mix of sesame seeds. Prepare a baking tray lined with baking paper. To make the caramel, I advice you to follow the step-by-step from David Lebovitz. Pour the sugar in a small pan over medium heat. Let the sugar melt slowly and stir gently when it starts to melt and until the desired colour and texture is achieved. Mix in the peanuts and sesame seeds. Remove from fire and with two spoons quickly and carefully scoop the mixture on the baking tray. Let cool completely.

L'idée de faire ces petites douceurs m'est venue alors que je me baladais dans les rayons d'un magasin alimentaire asiatique. La confection originale était faite entièrement avec des graines de sésame et m'a rappelé une confiserie de mon enfance, similaire faite avec des cacahuètes. Parce que mon goût pour les noix n'est pas un secret, ma version combine à la fois graines de sésame et cacahuètes grillées. Collantes, croquantes et complètement sucrées ces confections sont parfaites pour satisfaire une envie de douceur.. A part le caramel qui peut être délicat et demande de l'attention, ces friandises sont simples à réaliser. Je vais expérimenter autour de cette idée avec différentes noix et une version avec du caramel à la fleur de sel. Je pense que cela peut faire une bonne idée cadeau pour les fêtes.

J'ai hâte de visiter une nouvelle région de la Nouvelle-Zélande et de la partager avec vous ici... Mais pour l'instant, voici la recette du nougatine au sésame et cacahuète...

Nougatine au Sésame et Cacahuète (Pour 15)

50g graines de sésame 50g sésame noir 200g cacahuètes 290g sucre

Sur une plaque de cuisson recouverte de papier sulfurisé répartir les cacahuètes et enfourner à 175°C pendant 10-15 minutes. Retirer les cacahuètes du four et les laisser refroidir. Concasser grossièrement les cacahuètes et les ajouter au mélange de graines de sésame. Préparer une plaque de cuisson avec du papier sulfurisé. Pour faire le caramel, je recommande de suivre le pas-à-pas de David Lebovitz. Verser le sucre dans une casserole sur feu moyen. Laisser le sucre fondre doucement et mélanger lorsque le sucre commence à fondre jusqu'à l'obtention de la bonne consistence et couleur. Verser les cacahuètes et graines de sésame et mélanger. Retirer du feu et rapidement à l'aide de deux cuillères former des petits pâtés sur le papier sulfurisé. Laisser refroidir complètement.
