If the sun is back now, the past days have been chilly and wet if not windy. And as days are getting shorter down here in the southern hemisphere, they prompt us to look for comfort. In food, this notion might vary from one person to another. A feeling that might be triggered by a smell, a taste or a very specific dish. To me, the smell of bread baking in the oven, is definitely soothing. It's such a pleasure to hear the crust cracking and have a taste of the freshly baked loaf with a spread of cheese or butter. Cheering too, the delicate aroma of quince slowly roasting. And in reward for hours of cooking, a fragrant, rosy and melting fruit. Simply excellent served with a dollop of sour cream and roughly chopped walnuts. And nothing better than a bowl of hot and creamy soup to keep warm on a cool evening...

The season and the goods brought back from our Wairarapa expedition have been a source of inspiration in the kitchen. Loving nuts like I do, it's no surprise that walnuts were used almost everywhere. Like with those buckwheat crêpes or galettes as we call them in French in that case. Paprika and I usually eat part of the crêpes in a savory way and the rest in dessert. I prepared this time a quick cream with blue cheese. Served on top of the galettes with freshly cracked walnuts and a bowl of lettuce on the side. Simple yet rich with a cheesy sauce that makes it truly comforting.

215g buckwheat flour 1 egg 600ml milk 1 pinch of salt

Blue Cheese Filling (for 2 persons)

180g cream (sour or crème fraîche) 80g blue cheese (gorgonzola or what is available to you) Half a dozen walnuts, freshly cracked. Pear, core removed and finely sliced (optional)

In a bowl mix flour, egg and salt. Add gradually milk and mix to get a smooth batter. Cook crêpes on each side on a well greased frypan over medium-high heat. In a saucepan, over low fire stir together cream and crumbled cheese until the cheese has melted. Serve on top of pancakes (2 to 3 per person) and garnish with walnuts on top (and slices pear if added)

Si le soleil est revenu depuis, les derniers temps ont été froids, pluvieux sans compter le vent. Commes les jours se font de plus en plus courts ici dans l'hémisphère sud, ils nous poussent à chercher du récomfort. En cuisine, cette notion peut varier d'une personne à une autre. Un sentiment qui peut être déclenché par une odeur, un goût ou un plat bien spécifique. Pour moi, l'effluve du pain cuisant dans le four est totalement apaisante. C'est un tel plaisir d'entendre la croûte craquer et d'avoir le goût du pain fraîchement sorti du four avec une lichette de beurre ou du fromage. Réconfortant aussi, l'arôme délicat du coing rôti et la récompense après de longues heures de cuisson: le parfum, la couleur vermeil et le fondant du fruit. Excellent simplement servi avec une quenelle de crème aigre et des noix concassées. Et rien de mieux qu'un bol de soupe chaude et crémeuse pour se garder chaud les soirs frisquets...

La saison et les produits que nous avons ramenés de notre expédition dans le Wairarapa ont été source d'inspiration dans la cuisine. Aimant beaucoup les noix, c'est sans surprise qu'elles ont été ajoutées un peu partout, comme avec ces galettes de sarrasin. Généralement Paprika et moi mangeons une partie des crêpes salées et le reste en dessert. J'ai préparé cette fois une sauce rapide avec du fromage bleu, servie avec les galettes, des noix et un bol de salade en accompagnement. Simple et riche avec cette sauce au fromage qui en fait un plat réellement reconstituant.

Galettes de Sarrasin (environs 15)

215g farine de sarrasin 1 oeuf 600ml lait 1 pincée de sel

Crème au bleu (pour 2 personnes)

180g crème (aigre ou crème fraîche) 80g fromage blue (gorgonzola ou ce que vous avez de disponible) Demi-douzaine de noix 1 poire, épépinée et finement coupée (optionnel)

Dans une jatte mélanger farine, oeuf et sel. Ajouter peu à peu le lait et bien mélanger pour obtenir un mélange onctueux. Cuire les crêpes sur chaque face dans une poêle bien huilée sur feu moyen à fort. Dans une casserole sur feu doux mélanger la crème et le fromage grossièrement émiétté jusqu'à ce que ce dernier ait bien fondu. Servir sur les galettes (2 à 3 par personne) et garnir de noix (et tranches de poires éventuellement).

Those crepes look so hearty and perfect for wintery days. We should stay in TX for the winter months (which are one long fall like weather) and then head down under during our summer (which is scorching hot and humid) Thyme (Sarah)

Excellente idée que celle de servir les crêpes avec la crème dessus, au lieu de les fourrer comme on le fait généralement. Tu vas m’inspirer, nous mangeons souvent des crêpes de sarrasin ici.
