© 2012 Viviane Perenyi Chocolate & Nashi Pear Cake Don't be deluded with the glitter of the caramelized nashi pear wedge. This is about a chocolate cake. Okay, a nashi pear and chocolate cake. The one I baked for our autumnal picnic. After one of my readers requested the recipe, I baked it again writing down this time measurements. My mind has been distracted on the way though. I forgot to add to the batter pieces of nashi pear that bring a little extra to the texture of the cake and a distinct taste of the fruit. Nonetheless, the nashi pear compote gives moisture to the cake and it's fully enjoyable that way, just plain. But because I had already peeled and sliced a nashi pear, I wanted to use it and hence the caramelized version... Enjoy !

Nashi Pear & Chocolate Cake

3 nashi pears, peeled, core removed and diced 1 tbsp of brown sugar 215g flour (I used 105g APF, 70g wholemeal, 40g buckwheat) 1 egg 120g dark chocolate 80g unsalted butter 90g brown sugar 1 tsp baking soda 1 pinch of salt 1 nashi pear, peeled, core removed and cut in wedges 2 heaped tbsp of honey (optional)

Prepare the nashi pear compote: In a sauce pan over low fire, place diced nashi pears and sprinkle a tablespoon of sugar on top, cover and let it cook for 30 minutes or until soft. Transfer the compote on a plate and smash with a fork. Keep it aside. Preheat oven to 175°C. In a saucepan over low fire, melt butter and chocolate. In a big bowl, mix together flour, salt, baking soda and sugar. Add egg, nashi pear compote and mix throughly. Add melted butter and chocolate and stir well. (At this stage you can add the wedges of nashi pear to the batter or keep them to caramelized them later) Pour the batter in a cake pan (18cmX12cm) and bake for 45-50 minutes or until the blade of a knife inserted in the center comes out clean. To caramelized the nashi pear wedges, line a baking tray with baking paper. Coat well fruit wedges with honey and place them on the tray. Bake at 200°C for 15-20 minutes or until nicely caramelized. Serve hot on top of generous slice of cake.

Ne soyez pas leurré par le scintillement de la poire nashi caramélisée. Ce billet est à propos d'un gâteau au chocolat. Ok, un gâteau à la poire nashi et au chocolat. Celui que j'avais fait pour notre pique nique automnal. Suite à la requête d'un lecteur de la recette, je l'ai refait en prenant soin de noter les proportions cette fois. Mon esprit était quelque peu distrait cependant. J'ai oublié d'ajouter dans l'appareil les quartiers de poire qui apportent un extra à la texture du gâteau et le goût distinct du fruit. Néanmoins, la compote de poire donne du moelleux au gâteau qui est très bon tel quel, nature. Mais comme j'avais déjà épluché et coupé la poire, je voulais l'utiliser et par conséquent cette version caramélisée...

Gâteau à la Poire Nashi & Chocolat

3 poires nashi pelées, épepinées et coupées en cubes 1 c.à.s de sucre roux 215g farine (j’ai fait un mélange 105g blanche, 70g complète, 40g sarrasin) 1 oeuf 120g chocolat noir 80g beurre doux 90g sucre roux 1 c.à.c bicarbonate de soude 1 pincée de sel 1 poire nashi, épluchée, épépinée et coupée en fins quartiers 2 grosses c.à.s de miel (optionnel)

Préparer la compote: dans une casserole sous feu doux mettre les cubes de poire nashi et saupoudrer de la cuillère de sucre. LAisser cuire couvert pendant 30 minutes ou jusqu'à ce que les morceaux soient tendres. Transférer dans une assiette et écraser avec la fourchette. Réserver. Préchauffer le four à 175°C. Dans une petite casserole sur feu doux, faire fondre le chocolat et le beurre. Dans une jatte, mélanger farine(s), sel,bicarbonate de soude et sucre. Ajouter l'oeuf, la compote et bien mélanger. Ajouter le beurre et chocolat fondu et bien mélanger. (A ce stade vous pouvez ajouter les quartiers de poire nashi à l'appareil ou les garder pour plus tard et les caraméliser). Verser dans un moule à cake (18cmX12cm) et cuire au four pendant 45-50 minutes ou jusqu'à ce que la pointe d'un couteau inséré au centre en ressorte sèche. Pour caraméliser les quartiers de poire nashi, doubler une plaque de cuisson avec du papier sulfurisé. Enduire les quartiers de fruit de miel et disposer sur la plaque. Cuire au four à 200°C pendant 15-20 minutes ou jusqu'à ce qu'elles soient bien caramelisée. Servir chaud sur des tranches généreuses de gâteau.
