Sinemage Corella pear and kumquat

I know what you may think: Pear again !
Well, I eat a lot of them. First because I like them, their taste, shape, colour and texture and secondly because they are simply good for the digestion.

On Wednesday, officially the first day of Spring, the weather was beautiful, I enjoyed a lunch outside with Paprika and basked in the sun almost all the afternoon. Yesterday it was totally another story: Pouring rain and wind… So the only thing that came in my mind was a comforting crumble to use those pears and kumquats.

No innovation here. Just the pleasure of eating something sweet and warm. A way to say goodbye to winter and its comforting food.

This time, I’ve done the crumble in a different way I’m used to. First, I stewed pear and kumquat slices in a skillet over a low fire with honey and when everything was very soft, I scooped it in little ramekins and topped with a generous crust of rolled oat and almond meal and baked for 15 minutes. I liked this combination, kumquat gave a nice flavor and is not overpowering the mildness of the pear. Simply comfort.

Pear and Kumquat Crumble Makes 2

3-4 pears cut in fine wedges 3 kumquats finely sliced + 1 kumquat zest finely chopped 2 tbsp liquid honey + 1 tsp honey 50g rolled oat 50g almond meal or almonds finely chopped 1 tsp chia gel or 1 tsp unsalted butter

In a skillet lightly greased and over low fire, lay pear wedges and top them with kumquat slices and pour over 2 tablespoons of honey. Cover and let it simmer for 20-30 minutes until pears are very soft. Take off the lid and cook further to let the juice get syrupy. Preheat oven to 190°C. In a bowl, mix together almond meal, rolled oat, kumquat zest, the teaspoon of honey and chia gel or butter to make a grainy texture. Scoop pear and kumquat slices in ramekins and top them with crumble mixture. Bake for 15 minutes or until nicely golden. Remove from the oven and wait to cool a little bit before serving.

Oui, j’en mange beaucoup en ce moment. Premièrement parce que je les aime bien, leur goût, forme, couleur et texture; et deuxièmement parce qu’elles sont tout simplement bonnes pour le système digestif.

Mercredi, officiellement le premier jour du printemps, le temps était magnifique, j’ai déjeuné dehors avec Paprika et je me suis dorée la pilule presque toute l’après-midi. Hier c’était une tout autre histoire: vent et pluie à verse… Donc la seul chose qui me soit venue à l’esprit était un crumble réconfortant pour utiliser ces poires et kumquats. Pas d’innovation ici. Juste le plaisir de manger quelquechose de doux et chaud. Une façon de dire au revoir à l’hiver et son lot de nourriture réconfortante.

Cette fois, j’ai préparé le crumble d’une façon différente de ce que je fais habituellement. J’ai tout d’abord compoté les tranches de poire et de kumquat dans une poêle sur feu doux avec du miel et lorsque tout était bien tendre, j’ai transféré dans des petits ramequins et recouvert d’une généreuse crôute de flocons d’avoine et d’amandes moulues, le tout cuit au four pendant 15 minutes. J’aime bien cette combinaison: le kumquat donne un bel arôme sans dominer la douceur de la poire. Un simple réconfort.

Crumble à la poire et au kumquat Pour 2

3-4 poires découpées en fin quartiers 3 kumquats découpés en fines lamelles + 1 zeste d’un kumquat finement ciselé 2 c.à.s + 1 c.à.c miel liquide
50g flocons d’avoine 50g amandes finement concassées ou en poudre 1 c.à.c gel de graine de chia ou de beurre doux

Dans une poêle légèrement graissée et sous feu doux, disposer les tranches de poires et les lamelles de kumquat par dessus, et verser les deux cuillères à soupe de miel. Couvrir et laisser mijoter pendant 20-30 minutes ou jusqu’à ce que les poires soient très tendres. Découvrir et laisser cuire encore un peu pour que le jus devienne sirupeux. Préchauffer le four à 190°C. Dans un bol mélanger les flocons d’avoine, les amandes concassées, le zeste de kumquat, la cuillère à café de miel et le gel de graines de chia -ou le beurre- et obtenir une texture granuleuse. Répartir les poires et les kumquats dans des ramequins et recouvrir avec la mixture de crumble. Cuire pendant 15 minutes ou jusqu’à ce que le crumble soit doré. Retirer du four et laisser refroidir un peu avant de servir.

*what a comforting dish! never thought of combining pear and kumquat; would be rather perfect together. and such rich colors and contrast in those photos… my photos lack that quality for some reason – always a little dull. any idea of how to fix that?
