SHF * Festive Season *

It’s maybe Summer down here, but like everyone else, I’m preparing for the Holidays.

Christmas tree and decoration. Gifts. Cards. chocolates. At least, I can tick this one.

I’m so happy because my sister M. is coming very very soon and she’s a pistachio lover, so I’m sure she’ll enjoy these chocolates filled with pistachio paste !

As you may know, this month Nic hosts Sugar High Friday and the theme is Holidays, so this is my contribution to this special edition !

Chocolate

The coating maybe a little bit tricky, so I advice:

For about 20 chocolates:

80g pistachio ground 110g black chocolate, a good quality one. 2tbsp honey (with a mild flavor)

Please note, this quantity of chocolate is more than needed to coat, but necessary for dipping.

In a bowl mix with the finger tips pistachio ground and honey. Then press firmly with your palm to combine and form a paste. Flatten the paste (about 1 cm) and shape it in a square. Place the paste in a cling wrap and refrigerate for at least 1 hour. Remove from the fridge, cut it in regular squares with a sharp knife and place them back in the fridge. In a water bath melt the chocolate, then keep over low fire. Line a baking tray with baking paper. Then, one by one, dip with the help of a wooden pick, the pistachio cube in the chocolate without touching the side and the bottom of the container. Drain well over the pan any chocolate excess. Then delicately place the chocolate to dry on the baking paper. Process until you are done. Let them cool and dry.

C’est peut-être l’été ici dans l’hémisphère sud, mais comme tout le monde, je suis dans les préparatifs pour les fêtes. Sapin de Noël et décoration. Cadeaux. Cartes. Chocolats. Au moins, pour ceux-là je peux cocher la case !

Je suis si contente, parce que ma soeur M. arrive très très prochainement et elle adore la pistache, alors je sais que ça va lui plaire ces chocolats fourrés à la pistache !

Comme vous le savez sans doute, ce mois, Nic organise Sugar High Friday sur le thème des Fêtes alors voici ma participation pour cette édition spéciale !

L’enrobage des chocolats peut être un peu délicat, je vous conseille donc:

Pour environ 20 chocolats:

80g pistaches moulues 110g chocolat noir de bonne qualité. 2 c.à.s miel (arôme doux)

Dans un bol mélanger du bout des doigts la poudre de pistaches et le miel. Ensuite presser fermement avec la paume de la main pour bien mélanger et former une pâte. Aplatir la pâte (environ 1 cm) et former un carré. Placer la pâte dans du film alimentaire et la mettre au réfrigérateur pendant au moins une heure. Retirer du réfrigérateur, et à l’aide d’un couteau aiguisé découper la pâte en carrés réguliers et replacer les au réfrigérateur. Faites fondre le chocolat au bain-marie et garder sur feux doux ensuite. Doubler de papier sulfurisé une plaque de cuisson. Ensuite, un à un plonger à l’aide d’un pic en bois chaque carré de pâte de pistache dans le chocolat fondu sans toucher les bords et le fond du récipient. Bien égoutter l’excès de chocolat au dessus de la casserole. Placer delicatement le chocolat sur le papier sulfurisé pour sécher. Répéter jusqu’à épuisement des carrés de pâte. Laisser refroidir et sécher.

J’oubliais : tu penses qu’on peut les conserver un peu? Combien de temps? Au frais (je ne pense pas, le chocolat n’aime pas trop le froid, si?)? Flo Makanai

Flo, j’ai pu conserver les chocolats environ 3 jours à température ambiante (environ 20°c). Le frigo n’est pas recommandé en général pour le chocolat, mais si c’est vraiment le seul moyen de le conserver un peu… Bonne confection de chocolats ! Vanille
