Muffins Are Just Ugly Cupcakes...

...But We Love Them Anyway !

I smiled when I read this sentence on a girl’s tee-shirt. And every time I do these muffins I think about it. It’s true, they rise in a wild way, but they taste good. I prefer to eat them still warm when the texture inside is soft and the crust still crisp.

I call them muffins, because I bake them in a muffin tray. And I tend to call muffin anything with a cake batter baked in my silicone tins… But the truth is these cakes are based on an upside-down cake recipe.

I was looking for something different to do with my levain and I’ve been seduced by Florence’s recipe. The first time, I didn’t have any fruits, so I made some substitutions and ended up with this result. And I pretty like it.

It’s a dairy-free cake: no butter, no milk. Paprika was really surprised when I told him after his first muffin, that it was made with levain and there was no butter inside ! I’ve also tried a version with pistachio ground, cocoa and cardamom that was good too.

Dried figs & raisins Muffins Makes 6 Substitution for the pistachio-cacao version between brackets.

100ml sourdough starter, liquid and 100% hydration // 70g ground almonds (hazelnuts) // 75g ground walnuts (pistachio) // 40g muscovado // 100g buckwheat flour (85g linseed flour +15g cocoa) // 2 eggs // 1/2 tsp baking soda // 40g diced dried figs (some ground cardamom seeds) // 30g raisins

Preheat oven to 180°C. In a large bowl, mix ground almonds, ground walnuts and muscovado. Add levain and mix well. Add eggs and mix well. In an other bowl, mix together flour and baking soda. Then drop the flour+ b.soda in the batter and combine well. Add dried figs and raisin and mix to combine. Spoon the batter between 6 silicone muffin tins. Bake for 25-30 minutes. Remove from oven, turn them out of the tins and let them cool.

J’ai souri lorsque j’ai lu cette phrase sur le tee-shirt d’une fille: Les muffins sont juste d’affreux cupcakes, mais on les aime quand même ! A chaque fois que je fais ces muffins, je ne peux m’empêcher d’y penser. C’est vrai, ils gonflent d’une façon quelque peu incontrôlée, mais ils sont bons. Je préfère les manger tièdes quand la texture à l’intérieur est moelleuse et la croûte toujours croustillante. Je les apelle muffins, parce que je les cuis dans des moules à muffins. Et j’ai tendance à apeller muffin toute pâte à gâteau cuite dans ces moules… Mais en réalité ils sont basés sur une recette de gâteau renversé.

Je cherchais quelque chose de différent pour utiliser mon levain et j’ai été séduite par la recette de Florence. La première fois, je n’avais pas de fruits, j’ai donc fait quelques substitutions et j’ai obtenu ce résultat. Et ça me convient plutôt bien.
Ce sont des muffins sans produits laitiers: pas de beurre, pas de lait -ni de crème ! Paprika a été très surpris quand je lui ai dit, après avoir dégusté son tout premier muffin, qu’il avait été fait avec du levain et sans beurre ! J’ai aussi essayé une version avec de la pistache moulue, cacao et cardamome qui était bonne également.

Muffins aux figues sèches et raisins secs Pour 6 muffins Substitution pour la version pistache-cacao entre parenthèses.

100ml levain liquide // 70g amandes moulues (noisettes) // 75g cerneaux de noix moulus (pistaches) // 40g muscovado // 100g farine de sarrasin (85g farine de lin +15g cacao poudre) // 2 oeufs // 1/2 c.à.c bicarbonate de sodium // 40g figues sèches coupées en cubes (quelques graines de cardamome pilées) // 30g raisins secs

Préchauffer le four à 180°C. Dans un large bol, mélanger la poudre d’amande, la poudre de noix et le muscovado. Ajouter le levain et mélanger. Ajouter les oeufs et bien mélanger. Dans un autre bol, mélanger la farine et le bicarbonate de sodium. Puis verser d’un seul coup ce mélange dans le premier bol et bien mélanger. Ajouter les figues et raisins secs et mélanger. Répartir l’appareil entre 6 moules à muffin siliconés. Enfournez pendant 25-30 minutes. Retirez du four, démoulez et laissez refroidir sur une grille.

These look so more-ish. I find muffins tricky to make because they turn out so dense when I try to make them, but I like the idea of a sourdough version. That’s on my new year’s resolution - to start a sourdough culture (I never make resolutions usually):) shaz

I like that saying. I prefer muffins to cupcakes anyday. I do love the figs and raisins combo, does sound really comforting. mangocheeks
