On a Gloomy Rainy Fall Day...

Since Sunday there is a continuous rain. Yes, that’s also part of Autumn… Sunny spell is forecast at the end of the week. Only a couple of days left !

Last Sunday, while it was pouring outside, I prepared my chestnut cream: boiling, peeling, simmering, mashing, mixing… It’s a tedious work (specially to peel the chestnuts) but the cream worth the effort.

As soon as I tasted the cream, I knew I have to make something out of it. Yes, it’s not reasonable to eat 360 grams of chestnut cream with a spoon. And I know that I am able to do it !… How embarrassing would it be to tell to Paprika there’s no more crème de marrons because his greedy wife ate it all in one day ?!!

So I made a little bit of investigation, in search of inspiration. In Hungary, it’s served in a cup with whipped cream. In France, it’s baked in a moist cake called L’ardéchois.

Finally, I ended up making something else…

These turnovers filled with chestnut cream and chocolate chips are a blend: French, because they are an adaptation from the classic chausson aux pommes [apple turnover] ; A bit Kiwi, because I added local kūmara [sweet potato] to the dough; And Hungarian too, because their krumpli pogácsa* brought the idea to add this starch to the dough and I made the chestnut cream from my Hungarian recipe book.

The addition of kūmara brings moisture, taste and colour to the dough. A twist, but not compulsory.

To enjoy with a cup of tea on a rainy day…

*Please note, krumpli pogácsa is with potato but it’s not a laminated dough.

Depuis dimanche dernier, il pleut sans fin. Oui, cela aussi fait partie des charmes de l’automne… L’éclaircie est prévue pour la fin de la semaine. Encore quelques jours à tenir !

Le dimanche, alors qu’il pleuvait des cordes, j’ai préparé ma crème de marrons: bouillir, éplucher, mijoter, mouliner, mélanger… C’est un travail fastidieux [en particulier éplucher les marrons], mais la crème vaut bien cet effort.

Aussitôt après avoir testé ma préparation, je savais que je devais en faire quelquechose. Oui, ce n’est pas raisonnable de manger 360g de crème de marrons à la petite cuillère ! Et je sais que j’en suis capable… Ca serait embarassant de devoir expliquer à Paprika qu’il n’y a plus de “chestnut cream” parce que sa gloutonne de femme l’a entièrement mangé en une journée ?!!

J’ai donc fait quelques recherches en quête d’inspiration. En Hongrie, on la sert dans une coupe avec de la crème chantilly. En France, on l’incorpore dans un gâteau moelleux, nommé l’Ardéchois.

Finallement je me suis décidé à faire autre chose…

Ces chaussons fourrés à la crème de marrons et pépites de chocolat sont une fusion: français, parce que c’est une adaptation du classique chausson aux pommes; Un peu kiwi, parce que j’ai rajouté la kūmara [patate douce] locale à la pâte feuilletée; Et hongrois aussi, parce que le krumpli pogácsa* m’a donné l’idée de rajouter ce féculent à la pâte et je me suis basée sur mon livre de recettes hongroises pour faire la crème de marrons.

L’ajout de kūmara donne du moelleux, du goût et de la couleur à la pâte, mais ce n’est pas indispensable.

A déguster avec une tasse de thé, un jour de pluie…

*NB, le krumpli pogácsa est à base de pomme de terre mais la pâte n’est pas feuilletée.

Ici aussi le temps médiocre laisse du temps pour cuisiner des desserts bien reconstituants! J’aime beaucoup les marrons, mais en version salée (soupe, accompagnement) on peut en faire de nombreuses recettes… Dans sa version sucrée, j’en ajoute dans mes charlottes à une mousse au chocolat. Even though it is almost summer here in Los Angeles, I am now craving roasted chestnuts and these beautiful pasteries! As a young child in Japan, I loved the roasted chestnuts that street vendors would sell in little paper bags every fall/winter. I will have to make these when the weather gets cooler.
