A Bout De Souffle...

I told you last time about the origami box. Since then, I had an idea, but had to experiment it first. I like it cause it’s economic, customized and simple.

Few days ago, I went to Moore Wilson, hoping that I will be able to buy for the sales, these little cake pans I was dreaming about for months…I was very disappointed ! There was in a corner, a kind of table dressed up on trestle legs, with a couple of items that nobody want to buy. And that was it for sales !

I came back home empty-handed…

I was thinking afterwards about it and remember that I’ve seen there, paper baking molds, embellished with golden pattern. A little bit like for cupcake, but thicker. So I decided to make my own from baking paper ! I know, you are probably thinking, this girl is a little bit weird ?! Doesn’t matter…

After making the star box I decided to play with the corolla. A blowing soufflé coming out would make it more fun than a simple cake and a contrasting color against the white paper too. Cocoa will be perfect. I have to thanks Donna Hay and her 38th issue for this inspiring idea. It’ll sound strange, but I’ve never ate any soufflé in my life. So it was now or never.

Despite their volcanic allure, I’m surprised how light it can be. The texture is very soft. I like it and I think I’ll do it again ! I’m also happy that the idea works. The cooking time is fast enough. The box remains in one piece -I did stamp egg yolk at the rear side of each junction under the petals to avoid opening. I baked them on the plate to have a warm surface. Don’t you think it’s a good way to surprise and entertain your friends for a dinner ?

So here is the recipe for cocoa and pistachio soufflé -yes, I could not resist to add these little gems in…

Makes 4

45g unsalted butter
4tbsp cocoa powder
3tbsp caster sugar
250ml milk
4 eggs
Pistachios, coarsely chopped

Preheat oven to 200°C // Melt butter in a saucepan over low heat // Add cocoa powder slowly and stir // Then pour slowly the milk stirring continuously until a thick and smooth batter // Add sugar // Remove from the heat and let it cool // Whisk in egg yolks // Whip (or with electric beaters) egg whites until firm peaks // Gently fold through chocolate sauce and combine carefully // Drop pistachios in // Fill 4 ramekins or 4 star-boxes // Cook for 18-20 minutes // Serve immediately

Je vous parlais la dernière fois de boîte origami. Depuis, j’ai eu une idée, mais j’ai dû expérimenter en premier lieu. J’aime parce que c’est économique, personnalisé et simple.

Il y a quelques jours de cela, je suis allée à Moore Wilson, esperant pouvoir acheter en soldes les petits moules à gâteau que je convoitais depuis quelques mois… J’ai été très déçue ! Il y avait dans un coin, une sorte de table sur trétaux avec quelques articles que personne ne voulait acheter. Et c’était tout pour les soldes !

Je suis rentrée bredouille...

J’y ai repensé après et je me suis souvenu avoir vu des moules à gâteau en papier avec de jolis motifs dorés. Un peu comme les cupcake, mais plus épais. J’ai donc décidé de faire mon propre moule avec du papier sulfurisé ! Je sais, vous devez probablement penser cette fille est bizarre?!… C’est pas grave !

Après avoir fait ma boîte en forme d’étoile, j’ai décidé qu’il fallait jouer avec la corolle. Un soufflé sortant du moule serait plus intéressant qu’un simple gâteau et si la couleur contraste avec le papier blanc ce sera encore mieux. Le cacao fera l’affaire. Je remercie le magazine Donna Hay, 38ème édition, pour m’avoir inspirer. Cela vous paraîtra étrange, mais je n’avais jamais mangé de soufflé auparavant. C’était donc maintenant ou jamais.

En dépit de leur allure volcanique, je suis surprise par la légèreté du soufflé. La texture est fondante. J’aime beaucoup et je pense que je le referai ! Je suis contente également parce que l’idée fonctionne. Le temps de cuisson est suffisamment court. La boîte se comporte bien -J’ai collé chaque jonction sous les pétales avec un peu de jaune d’oeuf, pour prévenir l’ouverture pendant la cuisson. Je les ai enfourné sur une assiette pour avoir une surface chaude. Je pense que c’est une bonne façon de surprendre et divertir ses invités pendant un dîner, non ?

Voilà donc la recette du soufflé au cacao et à la pistache -oui, je n’ai pas résisté à la tentation de rajouter cette petite touche…

Pour 4 personnes

45g de beurre
4 c.à.s de poudre de cacao
3 c.à.s de sucre en poudre
250ml de lait
4 oeufs
Quelques pistaches concassées

Pré-chauffer le four à 200°C // Faire fondre le beurre dans une casserole à feux doux // Ajouter au fur et à mesure la poudre de cacao en remuant// Verser ensuite le lait tout en continuant de mélanger jusqu’à obtenir une texture épaisse et lisse // Ajouter le sucre et remuer // Retirer du feu et laisser refroidir // Mélanger les jaunes d’oeufs dans le chocolat tiédi // Monter les blancs en neige, au fouet ou au batteur // Verser le chocolat et mélanger délicatement // Rajouter les pistaches concassées // Remplir les 4 ramequins ou 4 boîtes origami // Laisser cuire pendant 18 à 20 minutes // Servir immédiatemment.

Oh… wonderful idea. I have made those origami boxes out of construction paper and use them to hold pins, staples, clips and other small things on my desk. I NEVER thought of using them for cooking. Vanille, did you use parchment paper to make them? Sylvie, Rappahannock Cook & Kitchen Gardener
