A couple of days ago, I borrowed "A Tale of 12 Kitchens" of Jake Tilson at the library. I've been attracted to the layout of the book, but also to the story. I've been drawn to it as soon as I read the first pages and specially those simple questions: "Why do we cook what we cook ? What has the deepest effect on our culinary habbits ? Is it childhood, marriage, the neighbourhood or what we saw on television last night ?"

I like the unconventional approach as a cookbook and obviously I appreciate it because somehow I recognize myself in it. Where I grew up, places I've lived, travelled to, people I've met (in life or on the Net) and became friend with and the man I married, have all broaden my taste, my knowledge about food and are the multiple influences that make what I eat and like to eat today. And I do feel fortunate about that.

And yesterday, one of the chapter of the tale of my kitchen was named Reine de Saba*. What an exotic name for a chocolate cake, no ? It was a friend who introduced me in the first place to this cake. Her childhood cake, as she liked to call it. She's now gone from New Zealand, but I've coincidentally found a recipe with the same name in an old cookbook I have at home. It's rather a simple cake, but the kind that does not last for long. At least for us. And as I type this post it's all gone... And because I got unexpected but cool news a couple of days ago - Thank you Saveur Magazine !- it was an excellent reason to bake a cake. And what could be better than a chocolate cake ?

Preheat oven to 175°C (347°F) In a saucepan over low fire melt chocolate and butter. In a bowl whip together sugar and egg yolks until pale. Add almond meal and cornflour and mix. Pour in melted chocolate and rum and stir. With a pinch of salt whip egg whites until soft peak. Then fold it into the batter. Grease a cake tin with a knob of butter and pour the batter in. Bake for about 35 minutes. Remove from the oven and let it cool a little before turning out of the tin. Let it cool on a wire rack.

Il y a quelques jours j'ai emprunté le livre "A Tale of 12 Kitchens" de Jake Tilson à la bibliothèque. J'ai été attirée par la mise en page du livre, mais aussi par l'histoire. J'ai été capturée aussitôt après avoir lu les premières pages et notamment ces questions simples: "Pourquoi cuisinons-nous ce que nous cuisinons ? Qu'est-ce qui affecte le plus nos habitudes alimentaires ? Est-ce notre enfance, le mariage, le voisinage ou est-ce ce que l'on a vu à la télévision la nuit dernière ?"

J'aime l'approche peu conventionnelle pour un livre de cuisine et de toute évidence j'apprécie parce que d'une certaine façon je m'y reconnais. Où j'ai grandi, les endroits où j'ai vécu, visités, les personnes que j'ai rencontré (dans la vie et sur le Net) et avec qui je suis devenue amie et l'homme avec qui je suis mariée, ont tous élargi mon goût, mes connaissances culinaires et sont les multiples influences qui font ce que je mange et aime manger aujourd'hui. Et je pense que c'est une chance.

Et hier, l'un des chapitres du récit de ma cuisine s'intitulait Reine de Saba. N'est-ce pas un nom exotique pour un gâteau au chocolat ? C'était une copine qui m'a fait connaître en premier lieu ce gâteau. Celui de son enfance, comme elle se plaisait à dire. Elle n'est plus en Nouvelle Zélande à présent, mais j'ai trouvé par hasard une recette du même nom dans un vieux livre de cuisine que j'ai chez moi. C'est un gâteau plutôt simple, mais le genre qui disparait rapidement. Tout du moins chez nous. Et au moment où j'écris ces lignes il n'existe plus... Et parce que j'ai eu une nouvelle pour le moins inattendue mais bonne il y a quelques jours - Merci le magazine Saveur !- c'était une excellente raison de faire un gâteau. Et quoi de mieux qu'un gâteau au chocolat ?

Reine de Saba <pre> Interpretation depuis la recette de ce livre.</pre> 125g chocolat noir 60g beurre doux 3 oeufs, jaunes et blancs séparés 105g sucre en poudre 2 c.à.s maïzena 75g poudre d’amande 1 c.à.s de rhum (facultatif) 1 c.à.c de sucre vanillé (facultatif) Une pincée de sel

Preheat oven to 175°C (347°F) Dans une casserole sur feu doux faire fondre le chocolat avec le beurre. Dans une jatte battre les jaunes d'oeuf et le sucre jusqu'à ce que le mélange palisse. Ajouter la poudre d'amande et la maïzéna. Verser le chocolat fondu et le rhum et bien mélanger. Avec une pincée de sel monter les blancs d'oeuf en neige. Incorporer les blancs dans l'appareil en soulevant la masse. Graisser un moule à gâteau avec une noix de beurre et verser la mixture. Cuire au four pendant environ 35 minutes. Retirer du four et laisser un peu refroidir avant de démouler. Laisser refroidir sur une grille

I have a similar cake in my childhood too, but with a teaspoon of ground coffee in it, and no almonds. With the almonds sounds like a torta caprese, more South Italian style I guess. It must be a real archetypal cake! Happy Week end Alessandra Alessandra

Le livre a l’air super intéressant ! C’est sûr que mon enfance, les personnes que j’ai rencontré ou les pays où j’ai vécu ont fortement influencé ma cuisine ! Et trois chose : - ton gâteau est magnifique - tes photos sont magnifiques - Et ta mention sur Saveur est amplement méritée.
