TarteBriochee

Paprika and I went last Sunday to the opening of the City Market on the waterfront.

This weekly market focuses on artisan products from the Wellington region and did welcome a big crowd that day.

Amongst all the food stalls, the florist had nicely displayed little persimmons on their branches, that caught my attention. I like the idea of these fruits with their bright orange colour used in a floral arrangement !

However, the persimmons I bought next door, at the Waitangi market, ended up in my oven… On a tarte briochée to be more accurate.

But no regret, when persimmon slices melt in the mouth and the brioche is moist… Diptych22

Persimmon Tarte Briochée [Printable Recipe]

250g flour |40g caster sugar | 50g butter chopped and at room temperature | 150 ml lukewarm milk | 1 egg yolk | One pinch of salt | 1 packet of instant dry yeast | persimmons, finely sliced | Sugar cane | 1 tbsp orange blossom water [optional] For the glaze 1 sheet of gelatin | 25ml water |50g caster sugar

Proof instant dry yeast in the lukewarm milk and a pinch of sugar // In a large bowl mix together flour, sugar, salt // Add butter and with your finger tips make a fine crumble // Incorporate egg yolk and mix // Pour in the milk and the proofed yeast and the orange blossom water// Knead the dough for 10 minutes // Let the dough rest for at least one hour at room temperature in a bowl covered with a clean tea towel // Preheat oven to 210°C // Transfer the dough on a slightly dusted surface // Flour the back of your hands, lift the dough and gently stretch the dough using the back of your hand. Keep a thicker edge all around // Place the dough on a baking tray lined with baking paper // Prick the dough and place slices of persimmons. Sprinkle sugar cane on the top // Bake for 10 minutes or until edges are nicely golden // Place the sheet of cold gelatin in a bowl of cold water for 5 minutes // Over a low fire, make a syrup with the water and sugar // Add the sheet of gelatin and stir // Brush the edge of the tarte briochée with the glaze.

Paprika et moi sommes allés dimanche dernier à l’ouverture du City Market sur le front de mer. Ce marché hebdomadaire se concentre principalement sur les produits artisanaux de la région Wellingtonienne et a accueilli une large foule ce jour là.

Parmi tous les stands alimentaires, le fleuriste avait joliment disposé des petits kakis sur leurs branches qui ont attiré mon attention. J’ai bien aimé l’idée de l’utilisation de ces fruits avec leur couleur orange vif dans une décoration florale !

Néanmoins les kakis que j’ai acheté juste à côté, au marché Waitangi, ont fini dans mon four… Sur une tarte briochée pour être plus exacte.

Mais pas de regret quand les tranches de kaki sont fondantes et la brioche moelleuse… Tarte Briochée au Kaki [Recette Imprimable]

250g farine | 40g sucre en poudre | 50g beurre en cubes et à température ambiante | 150 ml lait tiède | 1 jaune d’oeuf | 1 pincée de sel | 1 sachet de levure de boulanger | 2 kakis, coupées en fine tranches | Sucre de canne | 1c.à.s de fleur d’oranger (facultatif) Pour le nappage 1 feuille de gélatine | 25ml eau | 50g sucre en poudre

Laisser mousser la levure de boulanger dans le lait tiède et une pincée de sucre // Dans un large bol mélanger farine, sucre en poudre et sel // Ajouter le beurre et du bout des doigts malaxer pour obtenir un fin crumble // Incorporer le jaune d'oeuf et mélanger // Verser le lait et la levure hydratée et la fleur d'oranger // Pétrir la pâte pendant 10 minutes // Laisser reposer la pâte pendant au moins une heure à temprture ambiante dans un bol recouvert d'un linge propre // Préchauffer le four à 210°C // Transférer la pâte sur un plan de travail légèrement fariné // Fariner le dos des mains, soulever la pâte et en utilisant le dos des mains étirer doucement la pâte. Conserver une bordure un peu plus épaisse tout autour // Mettre la pâte sur une plaque de cuisson recouverte de papier sulfurisé // Piquer le fond de la pâte et disposer les tranches de kakis. Saupoudrer de sucre canne // Cuire au four pendant 10 minutes ou jusqu'à ce que les bords soient bien dorés // Mettre la feuille de gélatine à tremper dans un bol d'eau froide pendant 5 minutes // Sur un feu doux, préparer un syrop avec le sucre et l'eau // Ajouter la feuille de gélatine et mélanger // Badigeonner la bordure de la tarte briochée avec ce nappage.
